Semper Fi biscuit sandwich at the Sassy Biscuit

Despite its striking banality, one of Dover’s attractions — perhaps the only one — is a restaurant called The Sassy Biscuit. The latter specializes in Southern dishes and excels in the preparation of biscuits. Very fond of this dense, nourishing, flavorful, and somewhat crunchy-on-top-but-soft-in-the-inside concoction, I’ve had my fair share of it in New England. To my knowledge, The Sassy Biscuit still reigns supreme.      

Known for its recipes based on dropped biscuits (moister dough due to more milk) and Biscuit Sammies, the little brunch spot experiments with sweet and savory dishes and even prepares delicious waffles that directly stem from the same batter as their biscuits. For example, the Carolina Cristo, one of their biscuit sandwiches, aptly blends the acerbity of the pickles, with the sweetness of the blackberry jam, and the saltiness of the ham and cheese. On the other hand, specialties, like the Biscuit French Toast, exclusively focus on the sweet side and substitute the brioche or toast with a biscuit topped with Chantilly cream, maple syrup, and strawberries. Additionally, their culinary prowesses encompass drinks, such as a delightful Honey Dark Chocolate Mocha.

The Kitchen Sink at The Sassy Biscuit

Not to bash the little town with its quaint charm, but Dover, NH is one of the cities where I would the least expect to unearth a gem, like The Sassy Biscuit. I often tell myself that it was a risky bet to open a brunch spot specializing in biscuits and other southern dishes in that area. However, to my great pleasure, I was wrong. In fact, their popularity has grown, and they now serve their brunch all day, along with delicious chicken sandwiches.
