Intrigu\u00e9 par ce b\u00e2timent sobre et moderne, j\u2019apprenais alors qu\u2019il sagissait d\u2019un restaurant p\u00e9rouvien, inaugur\u00e9 en 2022, servant d\u00e9sormais des brunchs le week-end. De plus, le chef, interpr\u00e8tant de mani\u00e8re originale des plats de diff\u00e9rentes r\u00e9gions du P\u00e9rou, doit sa r\u00e9putation prestigieuse \u00e0 deux autres \u00e9tablissements, apparemment, tr\u00e8s bien c\u00f4t\u00e9s. En bref, tous ces attributs prom\u00e9teurs \u00e9veillaient d\u2019avantage ma curiosit\u00e9.


\n\nJ\u2019entamais ainsi ce brunch p\u00e9rouvien avec le Ceviche Mixto, un ceviche \u00e0 base de morue, de calmar, et de crevettes. Ce m\u00e9lange frais, tr\u00e8s savoureux et relev\u00e9 aux onions, \u00e0 l\u2019ail, et aux nombreux piments, incorporait habilement le poisson crue et les crudit\u00e9s marin\u00e9s dans le jus d\u2019agrumes. Par la suite, le Pan con Chicharr\u00f3n, un copieux sandwich \u00e0 la baguette et au porc brais\u00e9, bien garni d\u2019onions rouges produisait un riche amas de saveurs prononc\u00e9es et de textures contrast\u00e9es. De plus, le tout peut \u00eatre d\u00e9gust\u00e9 dans un d\u00e9cor chaleureux au design contemporain m\u00ealant le bois et la brique.
