La carte, offrant des plats tr\u00e8s raffin\u00e9s, originaux, et vari\u00e9s est mis \u00e0 jour quotidiennement, et les ingr\u00e9dients proviennent de fermes locales list\u00e9es sur les murs du restaurant. En outre, ce renouvellement perp\u00e9tuel du menu s\u2019aligne avec les saisons, garantissant ainsi la fra\u00eecheur des produits \u00e0 tout moment de l\u2019ann\u00e9e. Une telle assiduit\u00e9 dans l\u2019\u00e9laboration de la carte d\u00e9note un perfectionnisme qui se fait ressentir lors de la d\u00e9gustation des mets.<\/p><p>Qu\u2019il s\u2019agisse d\u2019oeufs B\u00e9n\u00e9dicte au homard, d\u2019un Banh Mi (sandwich vietnamien) \u00e0 la dinde et aux carottes \u00e0 l\u2019\u00e9rable, ou de pain perdu \u00e0 la nectarine, chaque plat se distingue par une certaine ing\u00e9niosit\u00e9 et une pr\u00e9paration tr\u00e8s raffin\u00e9e. M\u00eame des recettes plus conventionnelles, comme une simple omelette du jour ou une frittata accompagn\u00e9e d\u2019une salade, parviennent \u00e0 surprendre gr\u00e2ce \u00e0 l\u2019alliance subtile de saveurs et de textures. Les oeufs B\u00e9n\u00e9dicte au homard, par exemple, apparient harmonieusement la confiture de tomate faite maison (\u00e0 base de tomate, vin blanc, miel, paprika, etc.), la sauce hollandaise \u00e0 la ciboulette, les oeufs poch\u00e9s et les morceaux de homard. Je concluais ce festin en beaut\u00e9 avec leur pancake au sarrasin et \u00e0 la citrouille, incorporant, entre autre, de la banane caram\u00e9lis\u00e9e, des noix de p\u00e9can, et de la cannelle.
